Why doesn't my iPod touch save photos correctly to my photos app from email?

Well, my iPod touch is jailbroken, I believe a 3rd generation, but currently upgraded to 4.1..which is slow:( anyways, my iPod touch seems to be weirding out. Ok? So I went on all my emails, gmail, yahoo, etc. On mail app And tried to save photos that I sent from my phone. When I tried to save them, I checked my photos app, the photos showed up, but when I clicked on the photos I saved, they would not allow me to view the photo, when I used the little button for deleting, emailing or copying at the bottom of the iPod or top, the photos completely dissapeared or when I used a photo editing app, the photos from my email would not show up in the app..so what I did was, I clicked images near the photos I saved from my email from my phone, and I moved to the photos I saved, and the photos I saved were low resolution, cropped, looked bad. This happened to my bro too. Our iPods aren't broken, water spilled into, or cracked. My iPod has a lot of apps on it, jailbroken.. What are my options? And what are some possible solutions? I reseted all my settings, rebooted, went on safari to save photos from my email from my phone, went on safe mode? I need professional help for this... PS it was working a few days ago.
